i am eye balling this one .. (the 15cm chefs).

from what i could find its 12c27 steel, and weighs about 145 grams...

would like to hear if anyone as ever used or owned one like it, and their thoughts about it.

also open fro suggestions for a SS 15cm(ish) gyuto/wide petty, on a budget..

currently i have only this one, and the Fujiwara FKM on my sights...

I like the FKM better, nothing against that knife also check out the Gesshin Uranus at JKI

I have never stumbled upon those sabatier knives, but has FKM and it's not wide at all (not even close).

Here's a picture that illustrates why I don't think FKM has a wide profile:

Wide measured at the heel: Watanabe 37mm, Tanaka 35mm, FKM 29mm.

hi icanhaschzbrgr (hope i spelled that right :)), according to the specs provided on Japanese chef knives, what you have here is a 150mm petty, according to the what is listed there, the 150mm gyuto should be 35mm at the heel (like the Tanaka)....

Oh, my bad! A totally forgot they got 150mm gyuto.
I guess you'll like using it, as FKM are great value for money.

yes, they are very reasonably priced, and 150mm gyutos are not very common at these price ranges.
i will try to gather more info on the Sabatier....
