new handmade 240mm gyuto. I'd like to put a downpayment on a carter but they are just crazy now. Thinking a western Terayasu Nashiji $325 ish, any good other options? I'd like rustic finish and stainless cladding.

I looked at the mabroishi no meito 240mm. Some great stuff on JNS as well.

But then I thought I've wanted a carter IP gyuto for maybe ten years, if thats what I really want then just save up and get it. Seem to be around $900 on carters site, its the old school ones with the brass bolster I love thouigh. Maybe I'll be lucky and something will turn up, we'll see.
