I'm not so sure how to link a video but this is a must watch if you haven't seen it...hope this works. She talks about carbon knives and shows you how to destroy an onion.

I cringed more watching the edge bend over from being slammed repeatedly into a cutting board.

Might have been sharp when she started, but it wasn't after a couple whacks.

Brings back memories, though, that had to have been in the early sixties!

I'm actually old enough to have watched this stuff when it was on, (yikes!). I love how it was very poorly rehearsed; made for some hilarious mishaps. Can't help wincing slightly when I see her whaling away with a big ole blade, especially since I suspect that she didn't hesitate to imbibe a bit during the show (Don't really know, but like to think so, a bit like the later "Galloping Gourmet".).
 
She is amazing, must've developed her knife skills in the OSS during WWII working for Wild Bill Donovan.

Hardly, an OSS field agent would know better. I love Julia Child, but what this video says is that decent knives were really cheap, at the time.
