Out of curiosity, does anyone know what knives are used in Jiro Onos family restaurants? I couldn't help but wonder. I searched the internet as best I could and came up short. :dontknow: Will provide embarrassing pics of my first saya for legit response. :feedback:

It seems to me that the Kanji reads: "25th Generation (二十五代) Kanefusa(兼房) made(作)"
 
Thank you very much. Here are some more pictures :D Also, they appear to be using hi-soft type boards, does that seem like an accurate assumption based on the pictures?

Below is my first saya, as promised. Done with nothing but a table saw for large cuts, a super ****** dremel tool and loose sheets of sandpaper, not including the wood glue and mineral oil. The last 3 are pics I took just now, with knife included. The wife has managed to destroy the edge which is in major need of repair at the moment. Unfortunately I can't afford any good water stones right now so it just sits in its saya indefinitely, which makes me sad.

I was there a few years back and yoshikazu used a tsukiji aritsugu
