So here we havea Marko Tsourkan 240 gyuto using Devin Thomas Mystery Carbon. It's super wear resistant, holds a scary sharp edge for quite a long time (in pro kitchen environment) and takes a beautiful rainbow of colors for a patina.
The knife handles like a gentleman in all manners.
There are some marks on knife from it being used. I tried to polish it once but gave up. It being super wear resistant makes my attempts with micro mesh futile. These little scuffs do not effect performance in Any way.
3mm on spine at handle, 52mm in height and 240 on edge.
