Hi guys/gals,

Just acquired this knife from a forum member in August 2014. I've put it through its paces, but just haven't fallen in love with it the way I expected. It's not that it's a knife that has done anything wrong - just the opposite! It does everything right:

"240mm" Hiromoto Shiroko SOLID (not clad stainless)
-- no longer in production (sold out on jck.com)
Cutting Edge: ~9.5in (true 240mm edge)
Handle: Kukui Nut for the wood, blonde buffalo horn for the ferrule and cap, red and black fiber spacers (per Stefan, this wood is very limited - I doubt we'll see another handle like this again)

I discussed the acquisition here.

Since buying the knife, it arrived sharp. I BKF'd the patina off, and set out to put my own patina (I have a nice blue on it). I also sent it to Dave (@JKS) to undergo some treatment:
1) Sharpening (duh!)
2) Choil Easing
3) Spine Easing
4) I gave Dave carte blanche to evaluate it to determine if it would benefit from a thinning. Personally, I felt that it was pretty darn thin (not laser-thin, but darn thin!). He agreed, feeling that it would gain no perceivable benefit - so we didn't go through with it (gotta love Dave's honesty - he could have easily done the job and charged me for it).

It came back screaming sharp, and the choil and spine were like butter. So why sell it? I'm not spending much time in the kitchen nowadays, so I can't justify keeping it.

I bought it for $325. Given the work on it:
Asking: $350 OBO, including shipping (USPS, with insurance), saya (Konosuke brand), and oiling for transport. No trades. Paypal accepted.

+1...I'm tempted to buy it just for the handle. Love Stefan's work!!
 
The Stefan handle is a beauty. Where Stefan finds the mix of wood and horn, I have no idea. Keep thinkin' about it ... maybe it's time to treat yourself, as the holidays are right around the corner!
