Trying to compare these knives (240 gyuto). They seem pretty similar in weight, spine thickness, etc. Yoshikane iris a little bit longer and has somewhat harder steel. SIH seems to have a nice handle. Can anyone who has experience with both share their impressions?
 
Yoshi is definitely a heavier knife with a thicker spine, not as tall at the heel tho. The handle on yoshi has a horn ferule and end cap, they don't meet perfectly flush tho. SIH has a nicely finished clean handle, it is over sized tho so it may be uncomfortable if you have smaller hands.
Both are great cutters but very different knives overall. SLD holds an edge longer and takes a very toothy edge.. and it's a sexy piece of steel!
