    Here's on for Rick (Theory) to go after... at least he's touting something other than Shun as being "the best knife". Haven't watched any of his other vids, so I know nothing of his cooking/sushi skills.

    Miyabi knives have good blade profiles. I'm not a fan of the D-shaped Miyabi handles. The Miyabi 600 series knives are my favorite production knife from a large company. They also have good blade geometry. I don't like the big Morimoto stamp, but the signature Morimoto 600MC with stabilized amboyna burl handles and SG-2 is a solid performer. A real pleasure to use! But the sales pitch would come better delivered by a real chef with real chops.

    I hate to say it, but I'd rock one of those Birchwoods. I actually really like the SG2 steel, at least with the limited exposure I've had to it.

    I like Miyabi knives, too, AFA a large scale maker goes. I don't own any though. The guy's not really a knucklehead, he's got some talent, but not enough to be in the AWESOME thread. He needs to see some of Salty's tomato vids.

    On the sidebar of the 1/2 Witt knife demo I saw a short clip of Bourdain doing knife work. He had more and better info in less than 2 minutes!
