Hi:
I'm looking to add a 270 gyuto.
My favorite knife is a Tetsuhiro 240 Gyuto.
I push/pull cut and chop almost never roll/rock chop.
I prefer a wa handle but can live with a western style handle.
Either carbon or stainless are fine.
I don't mind having to ease the spine and choil if needed.
Trying to stay under $275.
