No, not really if you're interested in Japanese knives. Two decent shops though: MOES, corner of Sarphatipark, Tweede Van der Helststraat IIRC, has a few Herders, beside that Tojiro, Wüsthof and stainless French. But he knows its stuff.
Not far from their, Duikelman, corner Albert Cuijp and Ferdinand Bolstraat, for all professional kitchen stuff. About knives, very conventional though. Wüsthof, Global and so on.
 
Amersfoort is about half an hour by train from Amsterdam. There you've got Japansemessen.nl. First give them a phone call if you want to visit, though. It's a webshop, not normally open to visitors.
 
Curious how do the trains work in Europe. If you ride them a lot do you buy a pass or is it a set amount for diff. routes. When I went to Europe in 1980 bought a 90 day rail pass, very reasonable, went to France, Italy, Greece, Austria, Germany, Denmark, Holland, England, Scotland. Was really impressed with the trains.
 
You can buy a season ticket or pay per trip in general.

You can still buy an inter-rail pass, which is valid Europe-wide, but at nearly £500 for 1 month, it's not particularly cheap.

Trains in the Netherlands are very good, France too, Germany as well.

Trains in the UK are heinously expensive (unless booked in advance, then they're just "expensive", but it is not always possible) and generally overcrowded.
