Basically, I am looking for a chef's knife (traditional or a Santoku one)

Are you right or left handed?
Right handed.

Are you interested in a Western handle (e.g., classic Wusthof handle) or Japanese handle?
I am not sure, because I am a beginner and have never used a Japanese handle knife.

What length of knife (blade) are you interested in (in inches or millimeters)?
150 to 200 mm

Do you primarily intend to use this knife at home or a professional environment?
My intention is using it at home.

What are the main tasks you primarily intend to use the knife for (e.g., slicing vegetables, chopping vegetables, mincing vegetables, slicing meats, cutting down poultry, breaking poultry bones, filleting fish, trimming meats, etc.)?
Basically, I want to use the knife to prepare vegetables. Slicing, chopping, mincing, etc.

What knife, if any, are you replacing?
None. It will be my first chef's knife.

Do you have a particular grip that you primarily use?
No.

What cutting motions do you primarily use?
I am not used to any cutting motions. I am still a beginner.

What improvements do you want from your current knife?
I would like a knife easy to handle and to sharpen. It is not necessary that it is the best knife, I would like a precise and durable blade. It is desirable that it last a good time without sharpening.

I use a synthetic and wood board

So, I am asking you for suggestions because I have many doubts in my researches.
I do not know if I buy a german one (Zwilling) or a japanese. I read that the japanese is best but hard to sharpen. I have doubts about what brand of japanese I shoud buy. Which one have a good better cost benefit. I see a lot of brands at http://japanesechefsknife.com/ because they import to Brazil to a good price.
