That fish would probably be illegal in the US. I doubt it is 27 inches.
 
Every time I watch one of these I want one of those Okinawa-style butcher knives.

very cool. I like how they rip the skin off, I was wondering if you could do that with any other fish besides dover sole. Anyone know of any more fish you can rip the skin off?

You do it with catfish.

Makes me nervous when they clean the fillet in mid-air.
