Hi my name is rob im a chef by trade and im mad and kinky as hell for japanese knives. Only hard issue for me is im a left. Im from Melbourne victoria australia. Cheers.

What kind of Japanese knives are you looking for? If it is traditional patterns like yanagiba, usuba, etc. then some Japanese makers will do left-handed ones, but at a premium. If it is Japanese-made Western knives like gyuto, my suggestion would be to look at some good ones that are 50/50 symmetric. My vote would be for something from Takamura, like the HSPS Pro (Takamura Blazen) or Takamura R2 Migaki, truly incredible knives.
