if you are open to a wa you should look at the Ikazuchi 210mm
 
Already own a 240. Looking to downgrade in size to match the smaller cutting space. Still looking BTW.
 
+1 on the Ikazuchi from JKI. Stainless clad with AS core, but does have a wa handle. Same asthetics as the Hiromoto but a thinner blade. I have both and really like the Ikazuchi. My wife uses the Hiromoto AS, but it is just a 180.
