When reading the thread title I was really happy to see lunch meat. Great looking stuff.

Got a few questions thou:
- What kind of casing do you use?
- Do you smoke them as well?

Hog casing and protein lined collagen casing (from Sausage Maker). I did smoke about a quarter of them. They're the darker ones in the middle picture.
