Hi Del, was just hoping to pick your mind on what you recommend for etching.

I am just looking to do some maintenance on a gyuto of yours (just some thinning) and was wondering what the procedure for re-etching you recommend. Should i polishing the whole blade to a consistent finish our do you just use a cloth to etch the affected area?
