Hi all

I have a couple of old knives that i have been trying to identify for years. I thought i would post them here and see what i get.

The first is a dainty little 8” chef. Its very light and smaller than the 8” would suggest. It has an extremely thin blade that puts any "laser" Gyuto to shame and is a pleasure to use. I don't use it much as i don’t gave a steel any more and it looses a stone edge in about 5 min.. With a steel in reach its fun and a real eye opener if all you ever use is a Japanese knife.

Can any one make out the name other than SIHONORE 84? I have always assumed it was a Sab or Sab variant of some sort.

The other is a boning knife i picked up at a goodwill years ago. I don’t use it but its a nicely made knife. I love the little guy on it. It is kinda sharpened away but might he have his arm around a baguette? Anyone recognize who the little guy is?

Ha!.... We have a winner. Thanks for the link. I need to use it more so I guess I need a steel again.

Well well... A ladder. That might well be it but maybe from an earlier stamp? What is that on by the way?
Makes me happy it's "first quality"!
 
The first one looks like it is made of shear steel.
