I'm doing some sharpening for a friend of mine's mom. It's her father's knives that I will be cleaning up. There is an 11" chefs knife (unknown origin) and an old vic swedish SS steel boning knife with the tip completely broken off. When I started on my DMT coarse both edges looked "wavey" and my plate has never done this to any of my other knives.
What is going on here? Was the knife just not taken care of so when I'm removing steel it is very uneven? OR maybe I didn't know just how uneven the edge was until I started going. Should reflatten/straiten the edge by "sawing" the knife into the stone?
Any advice would be greatly appreciated
