Hello all,
Been lurking the forums so decided to say Hi.

I've been into knifes since my uncle gifted me my first pocket knife when I was 12 years old. Still have the knife somewhere, very little blade left on it as I used to think the power knife sharpener my parents kept in the kitchen was the best. I now obviously know much better and wish I could scold my younger self.
Out of high school I worked as a cook and an apprentice butcher. Later on after finishing college I worked as a night coach in the kitchen at a restaurant for a year. No longer working in the industry but still love cooking at home.
I've recently got a very nice SS Kramer 8" Chef knife by Zwilling for Christmas from my girlfriend (I was a good boy last year) and since have been researching knifes, sharpening techniques, stones, etc. Though I love my new knife I've always loved vintage pieces, I believe in a time when quality meant making things well by hand, so I started hunting around Craigslist and thrift stores looking for old knifes to replace my older set.

Here's a pic of 3 knifes I picked up on the weekend.

Top knife is a Mac Utility knife I got at a thrift store for a buck. It's got a chipped tip but the blade is still good. Can't wait to do some work repairing it and bringing it back to it's glory.
Middle Knife is a F Dick Boning knife from around WWII I'm told by the original owner, got it off Craigslist for $15.
Bottom Cleaver is a German Premier with an awesome convex ground edge, which is super sharp, weighs in at a hefty 2lbs. Same owner as the boning knife, was used by his parents at their Chinese restaurant in the 80's. Was really really well taken care of, only a few dings on the spine. Payed $20 for it.

All in all I think I got some nice knifes to add to my collection. Can't wait to post more pics of how the restoration goes.

Welcome to KKF from the great prairies .... :)

Please do post picture of your knives once restored! Step-by-step photos are always a favourite. The mac looks pretty vintage to me!

Thanks for the welcome all. Here's some pics on the fix to the Mac knife I made.

I started out by drawing a new tip profile with a sharpie then clamped it down and used a rotary tool with a cutting disc to roughly cut it out. I then moved to my rough stones and grinded out the profile, then progressively moved to a finer stone. All in all I think it turned out pretty good.

After the tip was fixed it was just a matter of putting a new edge on it. I did a single bevel to just get it going (plan on doing a convex edge when I have more time). I can report that the initial sharpening put a wicked sharp edge on it. I cooked up the nights entire dinner with the one knife and it sliced though veggies with 0 bruising, no sawing needed, just sliced through everything. Also broke down some bone in chicken breast with it, handled it no problem. After cooking I cleaned the blade and checked the edge, still sharp. Looking forward to using this knife, it's really nice to use. The best part, I only payed a buck for it. Other than my SS Kramer, it puts all my other knifes to shame (not hard seeing how my old knifes are one piece "Surgical" stainless steel specials.....) Anyways can't wait to do some more hunting and find some more old knifes to bring back to their original glory.
