Looking for options for a wide bevel knife. The one that comes to mind is the kono fuji. What other options are out there? Looking for something stainless or stainless clad in the 210 to 240mm. Would like to keep it under $500. Thanks for the help.
 
Hey Byron, I would suggest gesshin Heiji in semi stainless. That's one of the few knives that I have not thought about selling.
 
Kochi from JKI or maybe Sakai Takayuki Syousin Sakura from Knives and Stones (edit...scratch this one as it's not stainless)

The Heiji mentioned is also a very nice knife.
 
A heiji gyuto will be my next l next knife. Kagekiyo is also high on my list to check out, especially considering the lower price point of the one linked above. I'm stoked to check out a wide bevel. Let us know where you end up.
 
The ST Syousin Sakura is a really nice cutter, but as chinacats said, it's iron clad, and it's v reactive.
 
Tanaka Vg-10 or Ginsan (metalmaster has the wide bevel vg10)
