Hello, my name is Erich.
I originally found this forum by looking up the term "honbazuke". When I saw the name of the forum, I knew I had to join. I have been cooking most of my life and only in the past 4 years have I invested in real chef knives. The more I know about keeping them sharp, the better. I want to buy a sharpening stone soon, so I am sure I can get the right advice here! Thanks!
