Found another knife I have never seen before on my browsing through Amazon Japan - the translation is "jelly knife" (Kanji is: 兼松 羊かん庖丁), looks like a giant nakari (240mm) or a small cleaver. Reasonably heavy at 340gm.

Anyone know what this knife is sued for??

Thanks Turboscooter but I am wondering what kind of knife it is and does it have any other uses (and why is it so heavy??) It must be really sharp to cut glorified jello??
 
Yeah it's for yokan. I'm no expert, but it's double bevel like a nakiri and thin overall (most I've seen are under 300g).

It could possibly be used like a nakiri, but the edge geometry is flatter like an usuba (or sobakiri)

Obviously cutting yokan isn't a supremely difficult task, though when cutting bigger sheets of it, a longer taller knife allows straighter lines, and a thin sharp edge produces cleaner edges and corners for presentation.

I don't cut yokan much and definitely not professionally, so take my conjecture with a big grain of salt.
 
羊羹 = (よう)(かん) = 羊かん (literally "sheep stock/broth", but means jelly even if it isn't made by boiling sheep heads).

It looks like a noodle knife, which I hear is wide for control. 340g isn't super-heavy for a knife of that width and length. For comparison, my 210mm noodle knife is 215g, so the jelly knife is somewhat heavier per cm^2 of blade.
