Interesting Tech, but what about that huge cord attached to the handle. Not very ergonomic if you ask me.
 
Maybe not yet;). I could not find them for sale, I was trying to find out how much they would cost. I see these being popular at a place like The Sharped Image.
 
Well that's something else. I didn't really see it doing anything a sharp knife couldn't do though. :D
 
Hm... I see a problem there. If you're finger comes in contact to the blade that vibrates with an ultrasonic frequency, there's the possibility of serious injury due to a separation of the periosteum...

I know, Dave can rehandle the fugly OOTB handles which will include a built-in battery pack. Problem solved

Cut off the cord, change the handle, now that the battery and cord are gone you can get rid of the motor, then just change the blade and you've got a good knife. As a bonus, after that you can have it be any metal you want, any shape, and any handle type or size or material. :)
 
you can cut a cheesecake with a plastic cake knife. I want to see how it cuts through a hard loaf of sourdough bread, then i would be impressed.

Not a specialist - but I think this is made for the opposite side of the spectrum - tough or very soft foods. And it seems like mature technology - unlike other knives of the future.

Of course mass scale -> home consumer is not always easy transition, so it may be a solution to a problem that don't exists.

But it is working.
 
That thing actually seems to work, I give them that. But I would be concerned about possible health impact of those high frquencies on the finger joints and wrist as I am sure part of them gets transferred in the hand, since the whole blade is forced to vibrate (large vibrating mass).
