I have a saya that is too big (mainly height-wise) for my knife (210 gyuto). the knife just kinda slides around in it and makes me scared that it's going to dull the edge. Any tips or advice for improving the fit?

You can drill a hole and use a pin, but other than that, there is not much you can do I am afraid.
 
I wouldn't worry too much about it? You can mark ho wood up with your thumbnail, assuming it's a less expensive universal ho saya I think if you ever notice the knife is much duller than when you last used it you probably haven't cleaned the burr up or have a funky wire edge that would have failed sooner or later anyway.
 
What I was doing was folding a small piece of cardboard where the spine was just to narrow that area a bit more so there would be a snug fit keeping the knife from rattling in the saya.
But honestly I'd advise to look at a producer of magnetic knife sheets.

The last one linked fits my takamura r2 perfectly. I used to be a massive fan of sayas, but they can be delicate or crack. Since I bought these guards I never looked back

Pics would help. Perhaps shimming with paper might work.
 
Also, I wouldn't be concerned of a saya dulling the edge. It's just annoying to have that extra movement.
