Thanks for the recipe rami. I'm looking to get into some sous vide and any recipe supplied is great 😁.

And totally agree about not being many/any good bbq (US style) in aus.

Thanks Huw. Will give it a shot. It's harder to go out these days with the toddler. Last one I went to was bovine & swine enmore. Few month ago.
 
I just remembered that i have heard good things about a butcher/bbq joint down near Nicholas fish market in pyrmont
 
That's the place. The meat they sell looked exceptional. Think I'll take an esky and freezer bricks and stop in next time i visit my mate.

Vic's meats does some BBq in the fish markets, I havnt been but it is meant to be excellent.

Their brisket was mediocre IMHO, haven't tried any of the other cuts . There is a place in newcastle that was doing above average American style BBQ but that was 4 head chef's ago
 
You guys should import Josh for a few months. I'll sous for him.
