    S35VN 240 mm Gyuto

    Ok, this is a 240 (actual edge closer to 250) Gyuto
    A little different profile than most, requested by its new owner

    Hand rubbed CPM S35VN, and let me tell you, it was a chore.

    G10 ferrule and end cap

    Stabilized dyed maple burl Wa handle.

    Nice work! Love that maple burl. The profile looks like a Carter funayuki.

    Was the S35VN harder to hand-rub than the CPM D2?

    Rick, its the most abrasion resistant stuff I have tried in a blade this size. It is tougher than CPM D2.

    I knew s35vn was a fairly extreme steel, but from the way you HTed that damasteel and the fact that I just sharpened a bunch of cpm154....I do not envy the man who sharpens that thing.
