What I was trying to get out is that I really like the profile on the Gyutos. Caddy, you always find blades that suit my eye.
I'd like to learn more about these too.
I always thought that Tanaka's Nashiji-Ginsanko series and Damascus-cladded Blue#2 series were fun and affordable high-performance options. But they seem to have undergone a price hike thanks to the USD/YEN exchange rate. Ditto the Honsho-Kanemasa E-series.
