Mizuno makes two different versions of its San Mai blue 2 line, one has a shinogi and one doesn't. I've read before that the line w a shinogi line isn't actually a big bevel knife but rather it's just a cosmetic finish. Do these 2 knives actually cut very differently at all? For what it's worth I used to own the Gyuto without the shinogi and I was pretty happy with it.
