Hi KitchenKnifeForums. I am Chris a chef at our family restaurant. I am 27 years old. We have been in business since 1984 and I have been working for about 9 years now. Only recently have I began to have a interest in nicer knives. We use to just buy wholesale cleavers from Winco and ThunderGroup. :lol2: Just today actually I picked up my first real knife, a Richmond Fanatic from a forum member where. Who coincidentally lives in Houston so we met up at my restaurant. I feel like this is going to be a long journey, and I already feel many itches starting to happen.
We goof around quite a bit. Have to find a way to make those 12 hours pass :lol2:
That old cleavers my uncles, who use to be the head chef before he retired. Its about 15+ years old!
