Dear all,

As for the title I'm looking for a santoku 200-210 or gyuto 210-225 in carbon steel. Price range around 350-400€
I live in France but in a couple of weeks I’ll be visiting Tokyo and Kyoto.

I already have a Yoshikane V2 and a Shigefusa santoku, very different knife and profile. I consider the Yoshikane my best knife for personal feeling and balance between edge retention and sharpness.

I was thinking to get a white two knife that from what I know is almost the same of V2 (first from Hitachi second one from Takefu).

Please let me know if you have any suggestion and address.

That's true, both my santoku are custom order. Do you have any suggestion of a reputable knife maker which use shirogami 2?
 
You can always try Heiji. He can do swedish carbon steel, semi stainless steel, or other carbon steel of your choice. I like both Heiji and Shig 210 Santoku that I have.
