Hi;

My husband and son will be leaving in a couple of weeks for a business trip to Tokyo.....and I would LOVE to have them pick up Japanese knives for me while they are there. Any recommendations? Price points? They are only going to be in Tokyo and won't be able to leave (due to work)... I currently have Wustoff and Shun knives and am looking to upgrade from them to "amazing" knives that don't bankrupt us. :) Any information you can share is greatly appreciated. I want to make a wise investment in knives that last the rest of my life and hopefully pass onto the next generation. Recommendations on knives, sharpening stones, steel vs. carbon, etc are all areas that I would love to learn about before they leave in a couple of weeks. Thanks much.
 
Definitely Kappabashi district in Tokyo should be one of your stops. It's the kitchenwares district and prices will be a good bit below retail, with many stores and selection for a lot of well known stuff.

Use the desktop site (i.e. browser) and search 'kappabashi' on this forum and you'll find tons of threads on this topic.
 
If you have half a morning in Tokyo, indeed Kappabashi would be my recommendation to keep things easy. I was there literally last week and along the main street there are about 4 to 5 knife shops, easily identified, like Kamata and Takasu. One shop, forgot the name, even had native English speaking sales agent helping out (tourist) customers.
The two shops i was most impressed with were a bit hidden away in a side street called Kappa Bashi Hono. One shop is called called Tsubaya World. Entering the street from the side with the large rooftop chef, these shops were halfway down to the right in a side street. The shops were not larger then half a hallway and were more or less specialised in true handcrafted kitchen knives.

Thanks! Do you know approximate costs on the knives? We are trying to plan out spending $ for the trip. :) Also do you have recommendations stainless vs. carbon etc? Also I was thinking it might be a good time to pick up a good sharpening stone as well. :)
 
Morihei in Asakusa if you want to buy some natural stones.
 
Tsukiji fish market also have knife store: Masamoto or Nenohi. I use stainless because easy to care, but if you like carbon give a try. Just buy rust remove and Tsubaki Camellia Oil.
