    Love the idea of sayas with all knives, smart business plan, in my humble opinion.

    Good food is essential, where knives are an integral part of the process.

    Destruction test on a petty forged from takefu sg2 San mai ( aka r2) , with ln2o cryo around 63hrc , bent 90 degrees before the core snapped . Quite happy
    While I am at it why not heat treat couple gyutos right??

    270 honyaki yanagiba , differentially heat treated 52100, handle is two coloured amboyna burl , musk ox horn, ebony and brass spacers . Semi mirror finish , ura ushi sharpening done , with a micro bevel on the edge

    Thanks Alex , it looks like she will be on the crutches for another 2 months and can't drive for a while either
