Some more old school footage that I recently found. This one has me portioning a veal rack without scraping the bones.

Knives used:
Hattori HD 150mm honesuki
Konosuke HD 240mm wa gyuto

Will that cutting method around the bones work with rack of lamb. I've never been able to get it to peel back leaving the bones clean like you did in this vid. Enjoyed the music too, nice bass beat. Hmmm, does Costco sell primal cuts of veal chop?

Yup, learned this technique while working with lamb. It also works on pork racks and rabbit racks as well.
