Snow White all the way. It actually has some cutting power. The Tsushima won't do much more than polish.

Assuming you don't mind soaking the Snow White for a few minutes, it would also be my choice. It is a stone that needs some TLC, but it's worth it.

For the snow white, is there a need to go to super-stone or professional? Or is the traditional just as good? The price differences are staggering.

No soaking, please. Wet the top side, and wait a few minutes. Try with and without mud created with a nagura.
