How high is it worth polishing soft iron or soft stainless cladding (for example, refinishing after thinning)? If you take it to mirror or semi mirror, will it just scratch up again or will it hold the polish reasonably well? Does it depend on the knife? I certainly notice that some stainless cladding ia very soft (I'm thinking of you, Akifusa) while others seem a bit more scratch resistant.

From a purely practical point of view I would suggest use of coarse -- brown/mauve -- ScotchBrite. Apply it parallel to the edge.
 
I don't think I've ever seen brown or mauve Scotchbrite. I assume it is more abrasive than green? What sort of a finish does it leave?

Do you recommend it because it's easy?
