There is another (similar ?) move here at 48s, but I guess more focused on the tip section ... (?)

this one is on the round stone...also curious as to what the technical considerations are

He's profiling the edge and the tip.
 
It seems almost like de-burring (?) as its so quick
check out (1:53) he pulls the same move directly off the flat stones.

Typically we breadknife an edge so that we know when we have set a new bevel. He on the other hand is profiling the original edge. Perhaps a technique we might use after thinning a blade and setting a new bevel or re-profiling a garage sale or Craigslist find.
 
Haha love the way you say that the guy Is clearly OG haha =)
 
OG? Orange Guice?

I am thinking he might be dulling the edge for safety reasons before he starts the re-profiling.
