I have a couple of versions chilling out in a dark corner of my kitchen. My Serrano-jalapeño blend is smelling pretty damn great. I'll blend it tomorrow or Sunday and taste for final seasoning.

The markets are full of fresh chilis! I made one from Thai peppers and I can't even taste it. It's too hot! It was actually painful.

Boom, age the sauce. Put it up in the garage fridge for six to twelve months. Oh use some color preservative like Fruit Fresh too.
