I have a couple of versions chilling out in a dark corner of my kitchen. My Serrano-jalapeño blend is smelling pretty damn great. I'll blend it tomorrow or Sunday and taste for final seasoning.

The markets are full of fresh chilis! I made one from Thai peppers and I can't even taste it. It's too hot! It was actually painful.
