If you have any particular types of food or restaurants in mind for Montreal let me know, this is just a small list of the better places in the city off the top of my head

That's a terrific start, thanks! How difficult is Au Pied de Cochon to get into these days? Can you walk in, or do you have to book in advance? If so, how long?

Also, open to lots of different stuff, and have asked others for recs too, and will probably just cross reference those lists and then research some on my own.

One thing I'm craving and haven't had in awhile is delicious, authentic sushi if you've got a suggestion in that realm.

Appreciate it.

For incredible sushi look no further than Park restaurant for the real McCoy. The owner/chef has his own private fish import licence and they always have fish that no one else in the city has access to

APDC you will probably need reservations as it's a small place with not many tables. Best way to know is to call
Edit: tourist season is over so it shouldn't be all that difficult

There's a great polish restaurant in old town Montreal called Stash Cafe.

Wanted to check out Manitoba, but I never got the opportunity.
