Checking in to introduce myself. I recently decided to explore Japanese kitchen knives and came across this forum. Already have some experience with blades as I used to collect folders and fixed sporting blades. But I love to cook and I have been using the usual European style Henckels and Wustof kitchen knives. Hoping to get my first gyuto blade soon!
