I purchased it from Aframes in 2014 (I think) for just over $300 (I think), and it’s seen use in a professional kitchen, a butcher shop, and at home. It’s been lightly sharpened and thinned, and comes with a scarred-but-functional saya with the original saya pin. This knife shows some patina, scuffing, wear and tear, etc. Like most Sakai knives, this one runs a hair short on the cutting edge, but it’s still a prep monster with a long long life ahead of it and it deserves to go to someone who’ll use it more than I do.


Also for sale is a used Toyama 240mm gyuto. Asking $350.

I bought it from JNS late last summer for around $370. The knife has been used but not abused in a butcher shop and at home and shows some scuff marks and patina. It has been lightly sharpened but I do not believe I have ever thinned it. It’s a beast of a knife and also deserves to be somebody’s prep slayer. I just find my 210 version is all I really need.
