N00B here.
Have few lousy Henckels in the kitchen.the steel only works for so long.....and a couple unknown Japanese knives, one never used/in original box.
Ken Onion Work Sharp just arrived today..going to attempt to use it...after practice on "garage knives", of course
1K King stone, a vintage Exide combo razor hone ..and a couple cheap diamond hone plates.
