Finally I got a job in a kitchen that every chef has his/hers own knives.
Victorinox being the worse and only European brand ([emoji106]),
and the rest are Japanese.
Some lines of Masahiro that I haven’t seen anywhere on the internet, just in Norway(very nice knives), Shuns, Macs, McCusta, I don’t remember other brands now, except from two amazing Sakai Takayuki, don’t know which line, but top fit and finish, rounded everywhere, nice Japanese handles, nice Damascus, top grinds, very nice feel at hand.
Nobody touches no ones knives.
I can work with honyakis and feel safe.
Kitchen of my dreams.

Correction: The awesome knives were Yoshihiro, not Sakai Takayuki
