Heiji high carbon 240 gyuto - patina after 2 days of use
I used this knife for everything the last 2 shifts at work - veggies and protein. No discoloration of food, smell etc. I shot a little video in daylight, hopefully it shows the colors: purple, red(ish), yellow/orange and blue. Think she will look really awesome in a month or 2

Workhorse ... well a lot thinner than the germans I got. Have to get used to that - seems a little fragile when compared. Guess it's just me being a little silly
