    Sayas - Top to bottom cocobolo (my old stock), koa and a select grade poplar3
    Handles - Top to bottom. Red wood of sorts, koa, Arizona Desert Ironwood

    Pretty saya in the middle! stunning job with those handles. how do you keep the bevels straight? does that necessitate a jig?

    No, no jig. I shape it on a grinder, free hand. Having made dozens of these helps, but I always look for ways to improve.

    Thank you. That's a music to my ear (that it exceeded your expectation). Just as a reminder, use the saya for transportation only. Shiges need a watchful eye over them (unless your build a patina).

    Just julienne about 50# of onions, that seemed to work for developing my Shig's patina
    Today is as good a day to die as any. Except for tomorrow. I have plans tomorrow.

    225mm gyuto in 52100 with koa handle
    180mm gyuto in AEB-L with maple handle and saya

    Finishing a couple more tomorrow and a few more between Christmas and New Year.
