    I'd go 240 on either, and would choose CarboNext over Miyabi. 1k + 6k stone will do you just fine for quite a long time.

    worse than that! i have never been to any of my friends who has had a knife with a good edge. i really do not know how they are using their knives. ooooo, and i am even more shocked when i see how they sharpen them when i tell them that they are DULL.
