    I just got a Del Ealy Gyuto with his new grind, which cost me $430. While not perfect, it is one of the best cutters I have used. The amount of time and work it took Del to get to this point (6 knives, 2 1/2 months) is pretty incredible...and still Del will attest it could be perfected even more. If it costs $40-70 dollars an inch (Del,Carter,Devin Thomas) to buy the best tool for my job, then it is what it is. Unfortunately, I had to learn this lesson the hard way.

    Yeah that line is stolen/quoted from an episode "Henry's Kitchen" that someone posted here some time ago.

    Let's just hope the blowfish knife comes in a 240mm+ version.

    They're very cool for teaching young kids about cooking. Makes it fun for them.
