when you use a knife on this plate, do you have a recommendation on how to do it? I've tried it a couple times going slow but its so "bumpy" I was scared it would mess up the angle I was trying to keep it at. Do you use it wet?
Yes I use it wet (while I always prefered using the DMT XX dry) as it feels better this way. I should note that my ATOMA is well broken in at this point so maybe I'm feeling a smoother surface than when it's newer? I actually thought that I'd feel the spaces/gaps in between the pillars more than I do.
Funny thing though, after typing (yesterday) that I like to sharpen on it I used it on a Hattori HD which felt like nails on the chalkboard raising hair on the neck kind of experience. That was the first stainless knife I used the plate on, all the others were carbon.
Does any of this mean anything? I don't know, but it does make me pause in recommending it for sharpening.
