I want one of his knife so @&$#ing bad the notch he has on the gyutos looks like something that I need in my life
 
I have one of the Nashiji Nakiri's I got from Japan Wood Worker several years ago, love that blade! Takes and holds a wicked edge!
 
I've got one one of those gyutos I got from JKI a long time ago. First nice Japanese knife I bought. Excellent craftsmanship. Great Piece.
 
i have that as well and it is my favorite.. i recently got a 270 suji fu-Rin-Ka-Zan from japanese chef knives . while the fit and finish is not as nice it is a great knive and the same steel .. both as you said take and hold a wicked edge and they are easy to sharpen . i fear this post is going to cost me some money this afternoon :cool2:
