I ate too much last night, so, so good.
get bag of fresh mussels at Costco, smelled amazing
bring home and clean, de-beard, rinse, soak in cold water until ready to cook
1 cup AP flour
1 cup semolina
1 tsp sea salt
whisk to mix well
add 2 eggs
1 tbsp water (i find this is a real "feel" for it item)
knead for 10 minutes
wrap in plastic and refrigerate for an hour
fill pasta pot with water and place on stove
head out for a six mile run to work up an appetite
start water for boil
shower
roll out pasta and cut (fettucini), hang until ready to cook
lift out mussels and place into strainer, rinse thoroughly, let drain

dice large white onion
thinly slice garlic cloves - whole head pretty much
place diced onion into 12q steamer
splash of olive oil
saute until translucent
add 2-3 tbsp of butter
salt and pepper to taste
place garlic into pot
30-60 seconds until garlic aroma blooms
pour in 1-2 cups of white wine (used pinot grigio)
cook down fluid until almost gone
place mussels into steamer and place lid on pot
place couple tbsp sea salt into boiling water
place pasta into boiling water
Lift lid on steamer every few minutes and stir mussels from bottom to top until ready
Don’t over cook
Strain mussels and save liquid
Place pasta into mussel liquor
Place pasta and liquid into heated bowls
Shell mussels and place on top of pasta
Optional: garnish with fresh parsley
