Mussels and Homemade pasta

I ate too much last night, so, so good.

get bag of fresh mussels at Costco, smelled amazing
bring home and clean, de-beard, rinse, soak in cold water until ready to cook

1 cup AP flour
1 cup semolina
1 tsp sea salt
whisk to mix well

add 2 eggs
1 tbsp water (i find this is a real "feel" for it item)

knead for 10 minutes
wrap in plastic and refrigerate for an hour

fill pasta pot with water and place on stove

head out for a six mile run to work up an appetite

start water for boil
shower :)

roll out pasta and cut (fettucini), hang until ready to cook
lift out mussels and place into strainer, rinse thoroughly, let drain

dice large white onion
thinly slice garlic cloves - whole head pretty much

place diced onion into 12q steamer
splash of olive oil
saute until translucent
add 2-3 tbsp of butter
salt and pepper to taste
place garlic into pot
30-60 seconds until garlic aroma blooms
pour in 1-2 cups of white wine (used pinot grigio)
cook down fluid until almost gone

place mussels into steamer and place lid on pot
place couple tbsp sea salt into boiling water
place pasta into boiling water


Lift lid on steamer every few minutes and stir mussels from bottom to top until ready
Don’t over cook

Strain mussels and save liquid
Place pasta into mussel liquor

Place pasta and liquid into heated bowls
Shell mussels and place on top of pasta

Optional: garnish with fresh parsley
 
Nice! I don't eat them myself, but my wife loves mussels so I've been learning some recipes in order to build up good husband points. This seems like a nice, simple recipe that has the flavors she really loves.

BTW, where are the pics?!? :bat:
 
We love steamed mussels with pasta, but prefer them with an arrabiata sauce. I'm sure yours was darn tasty too.
 
Wildboar, as much as I like them, its one of her all time favorites and yep, I'm guilty of trying to gain points for making them for her.

OMG, she'd flip out if I made anything like arrabiata (had never heard of it before and had to google it) for her, for me, ideal though. Even when I pick up the pepper shaker she gives me the evil eye to be extra careful. :)

We are so polar opposites in this regard. My Mom, Mexican, and we always had something spicy going. Her salsa to this day is still my favorite snack with her homemade corn chips. She's visiting her Aunt in San Antonio and is due back on Tuesday, she buys tamales there at a special place and brings them home. I'm already looking forward to dinner with her.
 
The actions spoken of in this thread never actually happened.
 
This sounds tasty. Will have to give it a try.

Noob pasta maker question... for kneading for 10 min, must you do it by hand or would a dough hook on my Kitchen Aid work just as well?
 
I have a badly damaged shoulder and the KA works just fine for me!
